Spirulina maxima is a micro algae belonging to the Cyanophycea class (blue algae). This exotic blue algae, grows in soft waters of some lakes rich in sodium bicarbonate content. It is particulary rich in proteins, PUFA’s (Ploy-unsaturated Fatty Acids) and it is thus used for food purposes.

Spirulina represent an interesting source of pigment and particularly phycocyanin.
